Days 213 to 220 - March 30 to April 6

Hi Everyone,

Just a quick note to let you know that I will not be communication for a few days. Went to the emerg today because I was having a lot of pain after a bump on my head. Once the bump went down I started to notice a lot of small, very painfull bumps. Turns out that I have shingles. They came because of the first bump on the head which triggered the spread. I did not know this but the virus sits at the base of your skull at the top of your vertabrae. When I bumped my head of the freezer door it shook the virus loose and it has attacked the left side of my head and the left ear and left side of neck. So far nothing on the right side but you never know. I am on a very strong anti inflammatory and a pill to try and control the spread. So far it just hurts like hell. If you have had shingles then you know what I am talking about. The anti inflammatory also makes me tired so I think bedrest for me for the next few days.

Once I am feeling better I will send out a new blog.

D - Mixed babt spinach and romaine, grape tomatoes, cucumber and red onion in a fig vinagrette dressing. 6 oz Roast pork, baked white lima beans, baked apple and tunrip and 3 baby baked potaoes. Small piece of apple spice cake with vanilla icecream. Red wine and coffee with milk.

28DEC - Vitamins - B - 2 oz Fibre 1, 3/4 cup blueberries, 6 oz skim milk. L - 4 oz tuna, grape tomatoes and cucumber salad with fat ree dressing. 2 oz soy cheese. 4 melba toast. 10 oz skim milk. Soy lemon bar. D - 6 oz roast beef with roasted veggies with rosemary, gravy and 1 slice light rye bread.
15DEC - Vitamins. B - 2 oz fibre 1, 2 tsp dried cranberries and 6 oz skim milk. 2 cups coffee with milk. L - 1/4 dark chicken with salad and ranch dressing. D - 1/4 white chicken with bun and celery and carrots. 1 peanut butter soy bar.
14DEC - Vitamins. Br - 6 oz salmon, tomatoe and cucumber salad with fat free dressing. 4 melba toast and 10 oz skim milk. 1 lemon soy bar. D - 2 cups pork chop suey made with small pork cubes, bean sprouts, cabbage (red and white), red onion, shredded carrot, sliced garlic, mushrooms, brocoli, brussels sprouts, reduced sodium soy sauce and dried noodles. 1 peanut butter soy bar.

RECIPE - 5 Bean Chili - Serves 20-24

5 lbs/2.2 kgs of lean ground beef, 2 of each diced green, yellow and red peppers, 2 chopped onions, 3 sliced cloves of garlic, 2 tbsp chili pepper, 2 tsp salt, 1 1/2 tsp ground cumin, 2 tsp ground pepper, 1/2 tsp cayenne pepper, 1/4 tsp ground coriander, 1/4 tsp cinnamon, 2 bay leaves, 1/2 to 1 tsp thai garlic chili sauce, 4 cans diced tomatoes, 3 cans crushed tomatoes, 1 can beef stock with one can of water, 25-30 button mushrooms, 1 can of each white kidney beans, red kidney beans, black beans, white pea beans, navy beans (can also use northern, pinto or pork and beans). On medium heat, in a separate pan, brown the beef. Drain the beef (keeping back 2 tbsp of the fat) and transfer all to chili pot or large pot. Add crushed and diced tomatoes. Add diced peppers, chopped onions and mushrooms. Add beef stock and water. Add all spices. Cook for about 45-60 minutes. Drain and rinse the beans and add to the chili. Cook for about another hour stirring occasionally. You can add more chili sauce or powder if you desire.

RECIPE - Baked veggies with soy mozarella

DO NOT throw out the water that you boiled the vegetables in...it is check full of vitamins and nutrients. Put the veggie water in jugs in the fridge and drink a class or two through out the day. Heat it up, it is like drinking a vegetable broth.
Par boil 1 red cabbage, 1 cauliflower, 4 brocoli pieces, 14 brussel sprouts. Take half the amount boiled and put in the freezer for use at another time. Take the amount left and chop up and put in large roasting pan along with sliced mushrooms, green beans, sliced spanish onion and 3 cloves sliced garlic. layer 1/2 the vegetables and then put a can of dice tomatoes over the mixture and then put in the rest of the vegetable and a second can of tomatoes. Add salt and pepper through out the layers. Get a package of soy mozarella and slice and put all over the top of the vegetables. Preheat oven to 425 degrees and cook for 50-60 minutes. Until mozarella is golden brown. Makes 8 - 10 servings of vegetables.

RECIPE - Hamburger Stew

1.5 Kgs. Lean Ground Beef, 5 large carrotts cleaned, 2 medium onions cleaned, 4 stalks celery cleaned, 12-14 large mushrooms cleaned, 2 large peppers (any colour your like) cleaned, 1 cup frozen corn, 1 cup frozen peas, 4 cans diced tomatoes. 4 cloves garlic sliced. salt and pepper to taste. Take the ground beef and brown. Once browned put in a colender and strain out the fat and then rinse the browned beef with hot water. You want to get as much of the fat off the meat as possible. Put the clean ground beef in a large soup pot. Chop up all the veggies in big chunks and add to pot. Add the sliced garlic and then put in the 4 cans of diced tomatoes. Salt and pepper until you get the flavour you like. Cook for about 90 minutes. Add the frozen corn and peas and cook for another 30 minutes. You can either boil some chopped potatoes or bake them and put the stew over the potatoes. Do not add the potatoes to the stew as they will get mucky. Enjoy. Makes about 15 servings and it freezes well.

RECIPE - Low Cal Potatoe Salad

10 medium potatoes, 10 hard boiled eggs, 6 green onions, 2 stalks celery, 1/3 red onion, 1/2 cup half fat mayonnaise, 1/2 cup low fat plain yogurt. Boil the potatoes and eggs. Put in the fridge and cool for a few hours. Chop up in small pieces the red onion, green onions and celery. Take the potatoes and cut into small cubes and slice the eggs in an egg slicer. Add all the ingredients together and mix. Add salt and pepper to taste. Cool in fridge for a couple more hours or overnight when it tastes even better. One cup of this has you starch, protein and fat. Very good for you.
